APIMIODEK GUIDE

Heather honey – why is it jelly-like?

A dense, gel-like texture is a natural feature of many batches. It does not mean the honey is spoiled.

At a glance

  • stir gently before serving,
  • use a clean dry spoon,
  • pair with bread, cheese, porridge and pears,
  • avoid unnecessary overheating.

Sensory profile

Aroma

Heather, floral and lightly woodland.

Taste

Full, sweet and distinctive.

Texture

Dense and often jelly-like.

Finish

Longer, floral and herbal.

How to serve it

On bread

A thin layer stays well on toast and soft bread.

With cheese

Try it with curd cheese, goat cheese and mild mature cheese.

At breakfast

Add to porridge, yoghurt or baked pears.

In drinks

Add after tea has cooled slightly and stir well.

Storage

Keep the jar tightly closed in a dry, shaded place. Refrigeration is unnecessary. Crystallisation and batch variation are natural.
