How to Make Homemade Mead Step by Step – A Complete Beginner’s Guide

Homemade mead is a delightful combination of sweetness, aromatic spices, and mild alcohol content – an excellent drink for any special occasion. Here’s a detailed guide that will walk you through each step, from preparation to tasting.

🔍 Types of Mead

Type Honey:Water Ratio Maturation Characteristics
Quadrupel (Czwórniak) 1:3 3 months Light, often spiced
Triple (Trójniak) 1:2 3 months Delicate, great for beginners
Double (Dwójniak) 1:1 6 months Complex, rich taste
Sesquialter (Półtorak) 2:1 12–24 months Strong, for connoisseurs

🛒 Ingredients for 30 l Triple Mead (Trójniak)

  • 10 l of Multiflower Honey
  • 20 l water (filtered, boiled, cooled)
  • 1 packet of wine yeast (e.g., Zamojscy)
  • 120 g citric acid
  • Glass demijohn (min. 40 l)
  • Fermentation tube, stopper, thermometer, hydrometer

🪄 Production Steps

1. Yeast Starter (7 days before)

Pour a glass of water into a 1.5 l bottle, add yeast, nutrient, and a teaspoon of sugar. Set aside in a warm place for a week.

2. Mead Wort Preparation

Heat part of the water, add honey. Boil for 30 minutes, skim foam, replenish evaporated water. Cool to 18 °C, transfer to demijohn, add yeast starter and citric acid, seal with a fermentation tube.

3. Fermentation (8 weeks)

Ferment vigorously for 2–3 weeks, then gently for another 5–6 weeks. After fermentation, transfer the mead to a clean vessel, removing sediment.

4. Aging (12 months)

Bottle and store in a cool place for at least a year. Check a sample – if it remains clear, the mead is ready.

🍓 Flavor Variations

  • Spiced Citrus – orange zest, cinnamon
  • Ginger-Clove – fresh ginger, cloves
  • Herbal – mint or lemon balm

🎉 Serving Suggestions

Serve at 10–12 °C in wine glasses, gently swirling before tasting.

⚠️ Things to Avoid

  • Inadequate sterilization – risk of infection
  • Bottling too soon – drink may become cloudy
  • Lack of patience during maturation – young mead can taste harsh
